Bear’s radicchio

"Bear's radicchio", alpine sow-thistle, or radìc di mont in the local dialect, is a wild spring herb typical of alpine pastures that owes its name to the belief that bears, on waking from hibernation, would whet their appetites by tasting its leaves. Bitter and sharp, today it is preserved in oil with garlic and herbs: a real woodland treasure.
