Soft and delicate, Casolet is a typical cheese of the Alpine valleys, offering all the delicacy of milky and herbaceous notes in its soft paste. Often eaten fresh to better appreciate its creaminess, it is also available in matured versions with a stronger taste. In both cases, it can be enjoyed on its own or as an ingredient in typical local dishes.
