Borno salami
Typical of Val Camonica, despite its name this delicacy is not a sausage: it is a rich first course made of fresh egg pasta stuffed with local wild spinach, porcini mushrooms and a mixture of meats that may include sausage or pork trimmings. Served sliced and drizzled with melted butter and sage, the 'salami' is an excellent example of a convivial festive dish.
